"Trussing" is the term used to describe the process of using string to tie the turkey. Trussing will cook your bird more evenly when you tie the legs and wings to the bird closely. If they are untied, the tips of its legs and wings can burn while the remainder of the bird cooks.
When you have a large or complicated meal to prepare, you can eliminate a lot of the stress by doing any prep work the day before. Use a cooling rack that you can stack things on. Large batches of baked goodies can quickly encroach on your work space. These cooling racks will help you keep your space open for use. Stacking cooling goodies up instead of out makes sure you have plenty of room.
When preparing mashed potatoes, stir in hot (not boiling) milk to mix them. Using hot, rather than cold, milk results in more fluffed-up and lighter mashed potatoes. No one wants to eat mashed potatoes that are lumpy and bland.
Cook your food first, and then spice it up. Spices, such as garlic powder, salt, cayenne and pepper, are all wonderful seasonings. Everyone has their own individual tastes regarding spices. Instead of adding spices while you are cooking, let people season their own food after you have served it. That way each person can make it their own.

Then the smooth cheese sauce melts evenly over the noodles. When serving the macaroni with cheese, a good faced spoon works best. Spice up the dish with a bit of salt and black pepper.
